After a week of working hard, I was faced with a pile of peppers! I am shocked at the amount of banana peppers that come off of the plants, which are not that big! And they grow so fast!

Saturday I turned this:

And five minutes later my husband brought in more.

My brother sent me a really tasty-looking recipe to use those: Sausage Stuffed Banana Peppers

I’ll be trying this tomorrow.

Next I have to tackle the yellow squash. I already fried some in cornmeal (delicious) and I want to make a casserole. Anyone have anymore ideas for yellow summer squash? It’s coming in fast!

  1. Wow! That’s a lot of peppers. The recipe looks like cabbage rolls using peppers. Enjoy. I love squash in a curry or stir fry. Anything you would use zucchini in you can use yellow squash.

  2. Your banana peppers look amazing. We use them a lot with mushrooms, tomatoes, courgettes and eggplant to make Mediterranean roast vegetables. That looks like a great selection of books you have to read too.

  3. Sausage stuffed banana peppers is intriguing me. I mentioned to my husband and his first response was where can we get whole banana peppers. I hadn’t thought about the fact that I’ve only seen banana peppers sliced and in a jar – which only intrigues me more about this recipe 😊

    1. Ooohh… and I ordered that Paul Hollywood cookbook – signed, of course because I can never resist a signed copy when it’s offered. I’ll let you know if I have any success converting his recipes to gluten free.

        1. Mine hasn’t come either but maybe next week. I watched an author event that was offered virtually as well as in person and there were so many people there! Lots of US love for Paul Hollywood ❤️

  4. If you haven’t tried it already, you should find a good ratatouille recipe on line. It usually has summer squash with other squash and ingredients. Despite the fact that I’m not a banana peppers fan, that recipe your son sent looks delicious. I hope you have a great week. Thanks for stopping by my blog.

  5. I like summer squash just stir fried as a side dish or in soups, breads or muffins. You could also spiralize it to make noodles, at least we do that with zucchini.

  6. I want to grow squash, but it’ll have to be next season. Those banana peppers look great. I’ve never eaten one and I’m wondering if they’re hot. I love spicy. For the yellow squash I’d just sauté them in butter with fresh minced garlic, pepper, and maybe squeeze a little lemon juice over it. I do that with zucchini sometimes and it turns out great.

  7. You can try grilling the squash with zucchini and tomatoes. The top it with mozzarella chasse and some herbs.

  9. I love banana peppers as a condiment – never thought they’d make a great meal!! Thank you! I can send you my mom’s squash casserole recipe…it’s delicious but not very low calorie…lol

  10. Those pepper plants are really delivering! The smell of the fresh picked peppers is mouth-watering and add to that after they get pickled! Simply amazing. Find the soon to be giant watermelon hidden in the vines was a bonus
